A blend of Colombard and Sauvignon Blanc, with a touch of Gros Manseng, gives this cuvée the profile of an elegant, fresh and fruity white wine. Gustatively consistent and complex, its assertive style means it can be paired with a wide range of dishes.

Pairings: Aperitifs, tapas, fish soups, smoked salmon, ocean salads, grilled fish, seafood, seafood terrines and rillettes.
Serve chilled at 9°C.

Tasting notes :
Sight: Clear, brilliant color with yellow highlights.
Nose: Expressive, fruity, with notes of citrus (pink grapefruit, lemon), exotic fruit (lychee).
Palate: Lively and airy with the same fruity notes.

Vinification and vineyard :
Grape varieties: 60% Colombard, 20% Sauvignon, 20% Gros Manseng
- Climate: the plots selected for this cuvée are under oceanic influence.
- Terroir: more than a terroir, it's a search for style that has led to the elaboration of this dry white wine blend. In fact, the grape varieties that make up this blend have similar aromas, but complement each other in structure: freshness and acidity from Colombard, softness and fatness from Sauvignon Blanc, and opulence and structure from Gros Manseng.

Vinification and ageing :
- Mechanical harvest from early September for Sauvignon Blanc and until mid-October for Gros Manseng. Parcel maceration for 8 to 18 hours before progressive, gentle pressing. Fermentation in separate vats. Controlling fermentation, and temperature in particular, is essential for aromatic expression and maintaining the wine's freshness. Aged on fine lees for 4 months. First bottling in early spring.
