Sampling and tasting sessions take place in a laboratory and equally in the Comtesse du Barry kitchens. Each raw ingredient that arrives at our premises in Gimont (located in the Gers region of France) is manually controlled.
No machines or computers to replace human savoir faire !.

In order to preserve their taste, Comtesse du Barry foies gras are cooked once they are cold, without a trace of artificial preservatives.
